La eritrulosio reduttasi è un enzima appartenente alla classe delle ossidoreduttasi, che catalizza la seguente reazione:
- eritritolo NADP ⇄ D-eritrulosio NADPH H
L'enzima utilizza anche il NAD , anche se opera più lentamente.
